One thing I have missed the most with going gluten free is baking, it is just not the same with gluten free flour. My wonderful grandma had given me a no fail blueberry muffin recipe a couple of years ago, so I thought I would try it with the gluten free flour, and let me tell you....they were great!!!
Here is the recipe, feel free to try it with gluten free flour or all purpose flour.
Pre heat oven to 400 degrees
1/2 cup milk
1/4 cup vegetable oil
1 1/2 cups flour (gluten free or ap flour)
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup FRESH blueberries
Mix all ingredients except for the blueberries together in a bowl, I usually hand mix with a wooden spoon. Fold in the blueberries and put the mixture in muffin tins or even small loaf pans. Bake for 10-15 minutes, you can sprinkle sugar on top before baking for a crunchy top.
For this batch, I used my muffin top/whoopie pie pan....my favorite part of the muffin anyways! ;)
I have only ever used fresh blueberries, just because that is what you really taste when you eat them. I am sure you could try it with frozen berries or another type of berry.
These also freeze really well, just warm up what you want!
