Fall 2012 Cake Challenge

Fall is in full force and how better to celebrate then with sweets!  We were honored when asked to create a Fall inspired cake for Pink Little Cake and The Baked Equation's "Fall Cake Challenge" this year.  Take a look at all of the fabulous creations on the list...

I took on the task of creating a simple yet elegant cake (since I am by no means a professional baker) that I thought would be perfect for this challenge.  I found a great tutorial through Pinterest from "My Cake School"  on creating a pretty petal effect with frosting. Since carrot cake is always a favorite fall flavor in my house, I thought I would try this Petal Technique with cream cheese frosting.

Here it is all finished!

the beautiful tassel garland in this photo was created by The Flair Exchange

I used a boxed carrot cake mix (gasp), but the frosting was homemade.

Cream Cheese Frosting (the best I have ever had)

2 8oz packages of cream cheese, softened

1/2 C butter, softened

2 cups sifted confectioner's sugar

1 tsp Vanilla

Blend cream cheese, butter and vanilla until combined, slowly add confectioners sugar and mix well.

Be sure to check out all of the fabulous Fall cake creations on the list above! A big thank you to Kathia and Melissa for creating such a fun and creative challenge!!

I am happy to see a cream cheese frosting that holds up well enough to decorate with. Often mine gets too runny. Thanks, will give it a try!
