Fall is in full force and how better to celebrate then with sweets! We were honored when asked to create a Fall inspired cake for Pink Little Cake and The Baked Equation's "Fall Cake Challenge" this year. Take a look at all of the fabulous creations on the list...
I took on the task of creating a simple yet elegant cake (since I am by no means a professional baker) that I thought would be perfect for this challenge. I found a great tutorial through Pinterest from "My Cake School" on creating a pretty petal effect with frosting. Since carrot cake is always a favorite fall flavor in my house, I thought I would try this Petal Technique with cream cheese frosting.

I used a boxed carrot cake mix (gasp), but the frosting was homemade.
Cream Cheese Frosting (the best I have ever had)
2 8oz packages of cream cheese, softened
1/2 C butter, softened
2 cups sifted confectioner's sugar
1 tsp Vanilla
Blend cream cheese, butter and vanilla until combined, slowly add confectioners sugar and mix well.
